Organic Offerings
The team at Kelly Way Gardens is proud of our Vermont Organic Certification! Growing fresh produce for our restaurants (and your favorite dishes!) takes a lot of nourishment, time, and hard work. Heirloom tomatoes, all kinds of peppers, specialty herbs, forest mushrooms, hearty root vegetables, sprawling squashes, beautiful flowers, and so much more are all tended to by our gardeners. And they don’t stop there! Come peak summer, the spectacular maze-like Sunflower House at Billings Farm and the other-worldly Gourdwalk at Kelly Way Gardens enhance your visit with interactive garden displays. Our gardeners come up with a new design for the annual Sunflower House each year, which blooms with over 100 varieties August – September.

- Kayak, paddleboard, or canoe at Silver Lake in Barnard, Vermont.

Sweets of Summer
Our very own French Pastry Chef, Philippe Niez is usually behind the scenes creating the mouth-watering savory and sweet items our guests love. Classically trained in pastry, Chef Philippe is also an accomplished chocolatier and worked in England, France, and Germany before settling in Vermont. His pastry team is always sending out goodies, from The Spa's signature lavender macarons to the delicious burger buns at lunch, the breakfast pastries, and the always unique dessert menus.
