Reintroducing Richardson’s Tavern

Our resort’s second restaurant, Richardson’s Tavern returns with a renewed spirit — where local ingredients shine and the pace feels just right. Executive Chef Matthew McClure and his team create shareable dishes that evolve with the seasons, highlighting nearby farms, and focusing on local flavor. From Seed to Harvest

In our resort’s Vermont Certified Organic Kelly Way Gardens, the seeds of the summer are starting to grow into vegetables, flowers, and fresh produce for our kitchens! During the season, the gardens transform weekly, and our guests will experience it through beautiful flower arrangements in the lobby, new dishes on our menus, fresh garnishes on cocktails, and fun gardener-led programs!

For the ultimate garden-to-table experience, our Red Barn Dinner Series has dates June to August for incredible chef’s table dining right at Kelly Way Gardens itself. 

There are fields, paddocks, gardens, barns, and more to explore at Billings Farm & Museum.
